Research Profile

I am a Food Engineer, researcher and Assistant Professor in Food Science and Technology with international experience in Spain, Italy and Argentina. My work focuses on sustainable food processing, green extraction and the development of functional ingredients from microalgae, plant materials and agro-industrial side streams.

My research combines pulsed electric fields (PEF), supercritical-fluid extraction (SC-CO₂) and pressurised liquid extraction (PLE) with food characterisation and in vitro digestion. I am interested in translating food-science research into scalable solutions that improve the recovery and functionality of bioactive compounds, create value from underutilised raw materials and support the circular bioeconomy.
